About the Course:
Food safety and related foodborne illnesses are a significant health problem. The Centers for Disease Control and Prevention (CDC) estimates that about one in six Americans, or 48 million people, experience foodborne illnesses; 128,000 are hospitalized; and 3,000 die every year (Centers for Disease Control and Prevention [CDC], 2018a).  Nurses who interact with patients of all ages should be familiar with the assessment and teaching that is essential to prevention and treatment of foodborne illnesses.  This course focuses on the significance of the problem, identification of the illness, treatments, nursing interventions, and - most significantly - prevention. 

Learning Outcomes:
Upon completion of this course, the learner should be able to:
  • Discuss the incidence and prevalence of foodborne illness.
  • Identify the individuals at the highest risk for developing a foodborne illness.
  • Identify the variables that affect the safety of American food.
  • Describe the pathophysiology of various foodborne illnesses.
  • Discuss signs and symptoms of various foodborne illnesses.
  • Explain treatments for foodborne illnesses.
  • Describe nursing interventions for patients with foodborne illnesses.
  • Identify strategies to prevent foodborne illnesses.

About the Author:
Adrianne E. Avillion, DEd, RN, is an accomplished nursing professional development specialist and health care author. She earned her doctoral degree in adult education and her MS in nursing from Penn State University and a BSN from Bloomsburg University. Dr. Avillion has held a variety of nursing positions as a staff nurse in critical care and physical medicine and rehabilitation settings with emphasis on neurological and mental health nursing, as well as a number of leadership roles in nursing professional development. She has published extensively and is a frequent presenter at conferences and conventions devoted to the specialty of continuing education and nursing professional development. Dr. Avillion owns and is the CEO of Strategic Nursing Professional Development, a business that specializes in continuing education for health care professionals and consulting services in nursing professional development.
