The importance of a balanced, nutritious diet to the health of the human body is widely recognized. To fully grasp the role of vitamins in the health of the oral cavity, it is necessary to understand the nature and characteristics of vitamins and minerals and their actions within the body. This basic-level course seeks to remedy this information deficiency and provide dentists, hygienists, and assistants with information on the effect vitamins and minerals have on oral health.

Anthony von Fraunhofer, MSc, PhD, FRSC, is professor emeritus, University of Maryland Dental School, Baltimore, Maryland, where he also served as director of biomaterials research in the Department of Oral and Maxillofacial Surgery. He has written more than 400 scientific papers and 16 books, and contributed chapters to 15 monographs on dental biomaterials and materials science.
