Evidence indicates that many risk factors of childhood obesity can be identified during the period of conception to 2 years of age. It is critical that nurses working with children and families understand the nutritional needs of children in each developmental stage to positively affect prevention efforts and promote healthy eating patterns early in life. This course reviews factors from the prenatal period through late adolescence that contribute to obesity and challenges faced when promoting healthy nutrition with each age group. Food choices, modeling behaviors and socio-cultural and environmental influences are discussed. Evidence-based treatment approaches are presented.

Course Objectives

  • Discuss the prenatal period and infant nutrition as the cornerstone of prevention of childhood obesity.
  • Discuss recommended nutrition for toddlers, factors associated with overweight and obesity, and appropriate nursing interventions to help parents promote healthy eating with toddlers.
  • Discuss nutritional recommendations for preschoolers and the challenges in meeting nutritional needs and establishing healthy eating behaviors for preschoolers.
  • Discuss the nutritional needs, developmental influences, and issues that affect weight parameters in children aged 6 to 11 years, along with the nurse’s role in supporting healthy nutrition for children in this age group.
  • Discuss nutrition recommendations and developmental influences that affect the promotion of healthy eating behaviors in adolescents.

Judi Daniels, PhD, APRN, completed her master of science in nursing/family nurse practitioner program at Michigan State University and earned a PhD in nursing at the University of Kentucky in 2004. Throughout her nursing career, she has had a variety of clinical experiences. She is dual board certified in family medicine and pediatrics and is on the faculty at the University of Kentucky College of Nursing. Her interest in obesity across the age span began in 2000 when she became aware of the growing problem in her clinical practice. Since that time, she has published on the topic, has presented at several state conferences, and has chaired doctoral projects on child and adult obesity. She was recognized in 2014 as an outstanding nurse educator for the state of Kentucky.

Allyson M. Palombaro, MSN, is a pediatric nurse practitioner with the Pediatric Neurology Division of the Department of Pediatrics at the University of Mississippi Medical Center, Batson Children’s Hospital, in Jackson, Mississippi. She also works per diem as a pediatric nurse practitioner with the Pediatric Ambulatory Division in the after-hours clinic and is a graduate instructor for the dual primary/acute care pediatric nurse practitioner program at the University of Mississippi Medical Center. She received her certificate of nursing in 2005 from Case Western Reserve University, Frances Payne Bolton School of Nursing, in Cleveland, Ohio, and her master of science in pediatric nursing from Kent State University School of Nursing in Kent, Ohio, in 2009. Ms. Palombaro has worked extensively in the areas of pediatric neurology and pediatric epilepsy, managing acute, subacute, and chronic care for pediatric patients and providing multidisciplinary care with other pediatric disciplines. Her training in nutritional therapies as treatments for neurological disorders and her passion for holistic care of children have led her to incorporate obesity screening, management, education, and referrals into her everyday practice for prevention of future chronic diseases and to help the mental and physical well-being of all her patients.
